potato fritatta
4 medium potatoes - thinly sliced
1/2 cup of thinly sliced pumpkin
4 tree's(the smaler bits-) of brocolli also sliced
1/2 a white onion- sliced thinly
pepper /salt to taste
5 medium eggs
1 tblspn of water
grated cheese
preheat oven to 220
par boil the potato and pumpkin and brocolli
fry onion then add the par boiled vegies..add salt n pepper..
whisk the egg with water
put all vegies into a baking dish then pour the egg mix (u can also place herbs- oregano and parsley in with egg mix)
in on and around the vegies making sure the vegies at least have a layer of egg mix.. sprinkle cheese over and put in the oven til egg has cooked and top is golden- serve with salad..
make sure u watch the egg as it cooks fairly quickly
